Trying to lose a few sneaky kgs? Try our really simple twist on a Chinese favourite. It is super low calorie and still has plenty of carbs to help you feel satisfied. There’s just something about wrapping up the chicken mixture in lettuce leaves that makes this meal feel like you’re eating out.

INGREDIENTS:
500gms Chicken Mince1 tspn coconut oil (or whatever cooking oil you prefer)
2 tspns crushed garlic
1 tspn crushed ginger
1 carrot
1 green capsicum
4 stalks of spring onion
1 cup of mushrooms
8 large iceberg lettuce leaves
60mL salt reduced soy sauce
250gms microwavable brown rice
METHOD:
- Slice the spring onion, mushrooms and capsicum
- Heat the coconut oil in a pan
- Add the sliced vegetables
- Peel and grate the carrot
- Add the carrot
- Add the chicken mince
- Stir the chicken mince until it has turned white. Break a larger piece of the mince to check there are no pink bits
- Add the soy sauce, ginger and garlic
- Heat the rice in the microwave
- Mix the rice in
- Add the chicken mixture into the lettuce leaves
- Wrap it up and enjoy!
